The Bollinger House of Champagne produces 60% of the grapes needed for their products within their own vineyards. The vines at the vineyards are tightly planted and create a distinct landscape. The Bollinger Process of Winemaking

Quality is the hallmark of the Bollinger winemaking process. Primary fermentation takes place in either stainless steel, wooden casks, or oaken barrels and then bottled for resting in the chalk cellars. Long resting periods allow the wines to develop the delicate bubbles and marvelous aroma.

Riddling and disgorging by hand is the standard with the Bollinger family of wines. Once disgorgement is complete, the wines rest another three months to promote stability.
