American Rye Whiskey must meet a few standards established by US federal regulations:

  • Mash bill with a minimum of 51% rye
  • Aged in unused and charred oak casks
  • Distilled to a max of 160 proof (80% ABV)
  • Aged at a starting proof of less than 125 (62.5% ABV)
  • Bottled at a minimum of 80 proof (40% ABV)

The mash bill of rye whiskey has to be primarily rye, but the other 49% can consist of any other type of grain. Typical choices may be malted rye, malted barley, corn, wheat, rice, oats, and more.

Aging within new, charred oak casks passes on the flavor profile of oak, vanilla, and caramel into the whiskey.

A straight rye whiskey has additional requirements beyond those of plain rye whiskey. Straight rye whiskey has an age requirement of two years at a minimum, and it must be labeled if aged for less than four years. Any statement on the bottle refers to the youngest distillation in the bottle. This type of whiskey also needs to be unchanged without additives, colorings, flavors, or other liquors.

The History of Rye Whiskey

As early as the 17th century in the pre-United States, colonial America rye whiskey came to be. Farmers were able to grow rye better than the barley they were accustomed to using for whiskey, and they were able to avoid wasting the surplus grain that they grew. They were also able to make more profit from whiskey than grain because of its wider profit margin and easier portability.

Sazerac Cocktail

Ingredients:

  • 3-4 dashes bitters
  • 1 sugar cube
  • 1 tsp absinthe
  • 1 ½ oz. Cognac
  • 1 oz. Bulleit Rye Whiskey
  • Lemon peel

Instructions

  1. Place the sugar cube in a cocktail mixing glass.
  2. Coat the sugar cube with bitters.
  3. Muddle the sugar cube until almost completely dissolved.
  4. Add Cognac, Bulleit Rye Whiskey, and absinthe.
  5. Add ½ cup of ice.
  6. Stir well.
  7. Strain into a chilled glass.
  8. Squeeze the lemon peel into the drink.
  9. Rim the edge of the glass with the peel and place it in the glass.
