Tequila 101

Mexico strictly regulates Tequila production, requiring it to be made from the fermented sap of blue agave plants that are grown in one of five states that surround the city of Tequila – Jalisco, Guanajuato, Michoacan, Nayarit, and Tamaulipas. The three most popular types (or classes) of the spirit are Blanco (Silver), Reposado (Aged), and Añejo (Extra-Aged). Each has a different personality and flavor profile.

Blanco Tequila: Also called “silver” tequila, this clear, pure blue agave spirit is unaged and is usually bottled immediately after the distillation process where any cloudiness is removed. Blanco tequila has a bright, clean flavor that features the most genuine natural sweetness of the blue agave. Use it in tequila drinks like mojitos and margaritas and pair it with citrus fruits, fish, root vegetables, Mexican food, and even desserts.

Recommendation: Try Cuervo Reserva 1800 Silver. It’s a 100% agave white tequila that is named for the year tequila was first sold. The clean, smooth taste is ideal for almost every tequila cocktail you can think of, including the Margarita, Tequila Sunrise, and Paloma.

Reposado Tequila: This tequila is known as “aged” or “rested.” It is required to be aged in oak barrels for 2 to 11 months after distillation. Reposado has a softer, smoother, and more aromatic flavor than Blanco, and often takes on vanilla and/or caramel flavors during the oak aging process. Pair it with meat, fruit, and spicy foods.

Recommendation: In this category, look for Cuervo Tradicional® Reposado, a 100% blue agave aged tequila. It’s the original Cuervo® tequila and is still the number one premium tequila in Mexico.

Añejo Tequila: Añejo, which means “vintage,” is only permitted to be used for tequila that was aged for at least one year in barrels with a maximum capacity of 600 liters. The outcome of the extended aging process is a smooth, more sophisticated taste and darker color. Añejos that are aged three or more years are called Extra-Añejo. Sip this type of tequila on its own or pair it with heavier meats and rich foods.

Recommendation: In this category, look for Cuervo’s new añejo tequila – Tradicional Añejo. It’s aged in charred American oak for at least a year and then finished in single malt Irish whiskey barrels for a rich, complex flavor and remarkably smooth finish.
