Important Notes about White Wine

The fermentation of grapes without skins results in white wine, ranging in color from straw to gold. This type of wine is usually dry and light, serving as an aperitif, refreshment between meals, and with snacks or light fare. Recipes often call for white wines as well.

Sweet white wines come when fermentation is interrupted before all of the sugar becomes alcohol. This process is “mutage,” also known as fortification. To enhance the wort with sugar, winemakers allow the grapes to ripen longer, strain, or use noble rot.
