Salmon Steaks with Curried Fennel-Wine Sauce Paired with Kendall Jackson VR Chardonnay

Ingredients:

  • 3 TBSP vegetable oil
  • 2 large bulbs of fennel (halved, cored, and sliced lengthwise, ¼” thick), keep a few separate for garnish
  • Salt and pepper
  • 4 scallions (sliced 1” long)
  • 1 ½ tsp curry powder
  • ¼ cup dry white wine
  • 1 cup bottled clam juice
  • 4 salmon steaks (3” thick)
  • ½ TBSP lemon juice
  • 2 TBSP cold, unsalted butter

Instructions:

  1. Heat 2 TBSP of oil in a deep skillet.
  2. Add the fennel; season with salt and pepper.
  3. Turn heat down to low, cover the skillet, and stir occasionally, allowing the fennel to cook until it’s tender and light brown. (about 20 minutes)
  4. Add scallions, replace the lid, and cook until tender. (about 2 minutes)
  5. Transfer the fennel and scallions to a bowl.
  6. Put the other 1 TBSP of oil in the skillet.
  7. Add the curry powder and cook just until fragrant. (about 1 minute)
  8. Turn the heat up to high and add the wine. Boil until reduced by half. (about 1 minute)
  9. Add the clam juice and boil until reduced by half. (about 3 minutes)
  10. Cover and take the skillet off of the stove.
  11. Preheat the oven to broil.
  12. Season the salmon steaks with salt and pepper and place them on a baking sheet.
  13. Broil for 3-4 minutes.
  14. Replace the fennel and scallions into the skillet with the sauce and heat back up.
  15. Stir in the lemon juice.
  16. Take the skillet off of the heat and stir in the butter 1 spoonful at a time; season with salt and pepper.
  17. Plate the salmon steaks with the sauce spooned on top and fennel fronds as garnish.
