About Beer Types

All beers are made from a basic combination of water, malts, hops and yeast. They essentially break down into two main types – ales and lagers – with the main difference between them involving the brewing process.

ALES

Ales are brewed quickly (sometimes in as little as one week) using top-fermenting yeast at mid-range room temperatures. The yeast and fermentation process tend to give them a fruitier and spicier flavor than lagers.

Ales are generally full-bodied, robust and complex. They are often darker than lagers, ranging from rich gold to reddish amber. In general, ales have a higher alcohol content than lagers. They come in many varieties, including pale ale, India pale ale, amber ale, porters and stouts.

  • Blue Moon Belgian White is an unfiltered white wheat ale (a.k.a. Witbier) with a smooth, crisp taste and a zesty orange fruitiness. It is brewed by Coors Brewing Company in Golden, Colorado.
  • Newcastle Brown Ale is the biggest selling bottled ale in the UK, at more than 47 million bottles a year. The taste is sweet, hoppy and well balanced with a malty, nutty aroma.
  • Shell Shock IPA is a light bodied, golden India Pale Ale bursting with aromatic hops that boasts the bold flavors of citrus and grapefruit. It’s produced by Cayman Islands Brewery, the only brewery on Grand Cayman.

LAGERS

Lagers are brewed at near-freezing temperatures using a more fragile yeast that doesn’t rise to the top like ale yeast. Fermentation happens more slowly and the beer is more stable, so it can be stored (or “lagered”) for longer than ales.

The longer aging process gives lagers a lighter body and a smooth, crisp and refreshing finish. Lagers can range from sweet to bitter and pale to black, but most are a pale to medium color, have high carbonation, and an emphasis on the hops and malt flavors. In general, lagers have a lower alcohol content than ales. Lagers include pilsners, bocks and dunkels, and are the world’s most popular beers.

  • White Tip Lager, another favorite from Cayman Islands Brewery, is a smooth, moderate-bodied pilsner and the world’s first conservation beer. Part of the profits are donated to Cayman Marine Conservation.
