Qualities of Merlot

Merlot is a versatile red wine that pairs with a variety of dishes. It’s marked by the ability to take on the features of the area where it’s made as well as the techniques used. The wine can have a variety of flavors but is usually dry with a medium to full body with moderate acidity, medium-high alcohol level, and gentle tannins. For a dinner party to impress, consider the following recipe that pairs perfectly with a friendly Merlot.

Grilled Flat Iron Steak with Blue Cheese and Chive Butter

Ingredients:

  • 2 TBSP red wine vinegar
  • 2 cloves minced garlic
  • 1 TBSP cracked black pepper
  • 1 tsp crumbled dried rosemary leaves
  • 1 tsp dried oregano
  • ¼ tsp kosher salt
  • ¼ cup olive oil
  • 1 ½ pounds flat iron steak
  • 3 TBSP softened, unsalted butter
  • 1 oz. crumbled blue cheese
  • 1 TBSP chopped, fresh chives
  • ⅛ tsp cracked black pepper

Instructions:

  1. Whisk the vinegar, garlic, TBSP of black pepper, rosemary, oregano, kosher salt, and olive oil into a marinade.
  2. In a Ziploc bag, marinate the steak in the above mixture and refrigerate for half an hour.
  3. Prepare your outdoor grill to medium-high heat with a lightly oiled grate.
  4. Take the steaks out of the marinade and allow them to rise to room temperature over a 15 minute period.
  5. With a fork, combine the butter, blue cheese, chives, and ⅛ tsp of black pepper.
  6. Grill the steak to the degree you prefer.
  7. Allow the steak to rest for 10 minutes.
  8. Slice thinly across the grain, and serve with the prepared blue-cheese butter.
