The Tequila-Making Process

All tequila is made from blue agave in one of the five tequila-approved districts in Mexico.

Blue agave grows for about ten years before it’s harvested, and the core is prepared for cooking. Taken to the distillery, the cores are then chopped up and cooked to produce the sugars needed for fermentation.

After fermentation, distillation and any aging will follow to create tequila.

Classes of Tequila

  • Blanco – aged fewer than two months, clear, ideal for mixing
  • Reposado – aged between 2-11 months, darker
  • Añejo – aged for at least a year, darkest

The younger the tequila, the sweeter it is, and the older the tequila, the smoother it is.

Classic Margarita Recipe

Ingredients:

  • 3 TBSP tequila (blanco or reposado)
  • 2 TBSP Triple Sec
  • ¾ oz. lime juice
  • Margarita salt
  • Lime wedge for garnish

Instructions:

  1. Prepare a serving glass by running a lime wedge around the rim and dipping it in salt.
  2. Prepare a cocktail shaker with ice.
  3. Add all of the ingredients except the lime wedge. 
  4. Shake well until chilled.
  5. Strain the cocktail shaker into the prepared glass.
  6. Add ice to the cocktail and garnish.

Pitcher of Margaritas

Ingredients:

  • 1 ½ cups tequila
  • 1 cup triple sec
  • ¾ cup lime juice

Instructions:

  1. Add all of the ingredients to a pitcher.
  2. Add a few scoops of ice.
  3. Stir until chilled.
  4. Serve by the glass.
