Casual Night In

Impress your family and friends with your cooking abilities, and include the kids in the fun with this recipe for Chicken Fried Chicken. The recipe is simple; the results are delicious; and the skills required are minimal.

Ingredients:

  • 1 sleeve of saltine crackers
  • 2 TBSP all-purpose flour
  • 2 TBSP instant potato flakes
  • 1 tsp seasoned salt
  • ½ tsp ground black pepper
  • 1 egg
  • 6 chicken breast halves (boneless and skinless)
  • 2 cups vegetable oil

Instructions:

  1. Crush the crackers in a gallon sized ziploc bag and add the flour, potato flakes, seasoned salt, and pepper to the bag. Mix.
  2. In a shallow dish, beat the egg and coat each piece of chicken in the egg before adding to the ziploc.
  3. Seal up the bag and shake well to coat the breasts in the cracker mix.
  4. Heat the oil to 350° or until the grease reacts to a slight sprinkle of water.
  5. Carefully place the chicken in the heated grease and fry it, turning regularly for 15-20 minutes or until the juices are clear when the pieces are pierced.

It’s difficult to host a gathering where at least one guest isn’t following the Keto lifestyle. The following Keto Spinach-Artichoke Chicken recipe will display your culinary chops without sacrificing your guests’ diet plan.

Ingredients:

  • ½ package frozen spinach (10 oz. package)
  • 1 package of softened cream cheese (4 oz.)
  • ½ can of quartered artichoke hearts (14 oz. can) – drain and chop
  • ¼ cup shredded Parmesan cheese
  • ¼ cup mayo
  • ½ tsp garlic powder
  • ½ tsp salt
  • 4 chicken breasts (8 oz. boneless and skinless)
  • Salt and pepper as preferred
  • 1 TBSP olive oil
  • ½ cup shredded mozzarella cheese

Instructions:

  1. Prepare the spinach-artichoke mixture by warming the spinach, squeezing out the moisture and then mixing it with the cream cheese, artichoke hearts, parmesan cheese, mayo, garlic powder, and salt.
  2. Pound the chicken breasts to a max 1” thickness and season both sides with salt and pepper.
  3. Preheat the oven to 375°.
  4. In a large skillet, heat olive oil on medium-high heat, and brown the chicken to sear on both sides (2-3 minutes).
  5. In a large baking dish, place the chicken breasts and spread the spinach mixture over them.
  6. Place the baking dish in the preheated oven and cook for 20 minutes.
  7. Check that the meat has reached 165° and that the juices aren’t pink.
  8. Sprinkle mozzarella cheese over the chicken breasts and place back into the oven until it melts.
