History of Tequila

Tequila Cayman IslandsThe spirit we know today as tequila has come a long way! Its history began with a spirit called “pulque,” a fermented beverage made by the Aztecs of Southern Mexico from the native blue agave plant since about 1,000 BC.

Spanish Conquistador Hernan Cortes invaded Mexico in 1519 and conquered the Aztec Empire, claiming Mexico for Spain. With him, he brought a distilling procedure that the residents of Tequila (a town in the state of Jalisco, Mexico) would quickly put to good use.

As European settlers ran out of the spirits they brought with them to the New World, they decided to distill this agave drink and produced North America’s first native, refined spirit. As the process of making it was perfected by the 1600s, the first distillery opened in Tequila, leading to the name for the beverage we know today – tequila.

Types of Tequila

There are five different types (or classes) of tequila. The three most common and popular are Blanco (Silver), Reposado (Aged), and Añejo (Extra-Aged). Each has a different personality and flavor profile.

Blanco Tequila: This clear white spirit is also known as “silver” tequila. It’s a pure blue agave spirit that is unaged and typically bottled immediately after distillation where any cloudiness is removed. It has a bright, clean flavor with the most genuine natural sweetness of the blue agave. It works well in tequila drinks like mojitos and margaritas and can be paired with citrus fruits, fish, root vegetables, Mexican food, and even desserts.

We recommend: In this category, try Don Julio Tequila Blanco. It has a lightly sweet and pure agave flavor with savory and citrus notes. Sip this delicious, subtle, and smooth tequila neat to fully appreciate it.

Reposado Tequila: This tequila is known as “aged” or “rested.” Regulated by the Mexican government, it must be aged in oak barrels for two to eleven months after being distilled. It has a softer, smoother, and more aromatic flavor than Blanco, and often takes on vanilla and/or caramel flavors during the oak aging process. Pair Reposado with meat, fruit, and spicy foods.

We recommend: In this category, try El Jimador Reposado Tequila. This is the #1 selling tequila in Mexico and fans love it for its agave, vanilla, woody, and fruit flavor notes.

Añejo Tequila: Añejo, which means “vintage,” is only permitted by the Mexican government to be used on tequila that has been aged for at least one year in barrels with a maximum capacity of 600 liters. The longer aging process results in a smooth, more sophisticated taste and a darker color. Añejos that are aged three or more years are called Extra-Añejo. Sip this type of tequila on its own or pair it with heavier meats and rich foods.

We recommend: In this category, try Herradura Añejo Tequila. Introduced in 1962, this tequila matures in the barrel for 25 months and features a beautiful amber color and a complex, spicy taste.
