Tequila 101

Tequila is a product of Mexico. Its production is highly regulated and the beverage must be made from the fermented sap of blue agave plants grown primarily in one of five Mexican states surrounding the city of Tequila – Jalisco, Guanajuato, Michoacan, Nayarit, and Tamaulipas.

There are five different types (or classes) of tequila, each with a different personality and flavor profile. The most common and mostpopular are Blanco (Silver), Reposado (Aged), and Añejo (Extra-Aged).

Blanco Tequila: This clear white spirit is also known as “silver” tequila. It’s a pure blue agave spirit that is unaged and bottled immediately following the distillation process where any cloudiness is removed. Since it is not aged in barrels, Blanco tequila has a bright, clean flavor with the most genuine natural sweetness of the blue agave. It works well in tequila drinks like mojitos and margaritas.

Recommendation: In this category, try Cuervo Reserva 1800 Silver. It’s a 100% agave white tequila that is named for the year in which tequila was first sold. It has a clean, smooth taste and is perfect for almost every tequila cocktail you can think of, including the Margarita, Tequila Sunrise, and Paloma.

Reposado Tequila: This tequila is known as “aged” or “rested.” Regulated by the Mexican government, it must be aged in oak barrels for two to eleven months after being distilled. It has a softer, smoother, and more aromatic flavor than Blanco, and often takes on vanilla and/or caramel flavors during the oak aging process. Pair Reposado with meat, fruit, and spicy foods.

Añejo Tequila: Añejo, meaning “vintage,” is only permitted by the Mexican government to be used on tequila that has been aged for at least one year in barrels with a maximum capacity of 600 liters. This results in a very smooth, more sophisticated taste and a darker color. Añejos that are aged three or more years are called Extra-Añejo. Sip this type of tequila on its own.
