What is Bourbon?

Bourbon has been distilled since the 18th century. As you may already know, all Bourbon is whiskey, but all whiskey is not Bourbon.

Bourbon is not as simple as you might think. For a whiskey to be called Bourbon, it must by law be made of a grain mixture that is at least 51% corn; be distilled at no more than 80% alcohol (160 proof); be aged in new, charred oak barrels (a process that gives the Bourbon its reddish color and distinctive taste) at no more than 62.5% (125 proof); and bottled at 80 proof or more. Lastly, it must be made in the United States.

Approximately 95% of all Bourbon is produced in Kentucky. The name may have originated in an area called Old Bourbon, now known as Bourbon County. It may also have been named after Bourbon Street in New Orleans, a major port where shipments of the Kentucky whiskey were a popular alternative to the more expensive French cognac.

The oldest Bourbon distillery in Kentucky is the Woodford Reserve Distillery, which has been distilling on the same site since 1780. Woodford is practically the inventor of the spirit we know and love today. Is Tennessee Whiskey Also Bourbon?

No; although most Tennessee whiskeys meet the criteria to be called Bourbon, they are known as Tennessee Whiskey. By law, Tennessee whiskey must be produced within the state, but must also undergo a filtering process with sugar-maple charcoal. Most current producers of Tennessee whiskey do not label their products as “bourbon” on any of their bottles or advertising materials. Jack Daniels, for example, is Tennessee Whiskey.

Bourbon can be sweet, smoky and/or slightly spicy, and it’s easier than you may think to find the right flavor combinations. Pair it with sharp cheeses, such as nicely aged cheddars or extra-aged Goudas.
