Understanding the vocabulary used when discussing wine characteristics is essential to the process.   • Sweet, semi-sweet, or dry – A simple way to tell if a wine will be sweet or dry is to look at the ABV. A higher alcohol content indicates that all of the sugar was used in the fermentation process, so dry wines have a higher ABV. Sweet wines have less alcohol by volume.
  • Tannins – The tannins in wine come from the grape seed, stems, skin, and even the oak barrels. The greater level of tannins tends to add a bitter taste, but that should not be confused with being dry. All red wines have tannins, but some are more pronounced than others. Wines with high levels of tannins are ideal for pairing with meats.
  • Acids – Acids, as one of the fundamental elements of wine, are also underestimated in their effect on taste. Acidity gives the wine its tart taste, and sweetness can cut through the acidity in highly acidic wines.
  • Body – The body of a wine is its richness or heaviness of flavor. A combination of the other factors affects the overall body.
  • Alcohol – Most wines will fall somewhere between 11-13% alcohol by volume (ABV), but they can range from as little as 5.5% to as much as 20% ABV.
