Upper Cut

Ingredients:

  • 1 ¼ oz. Cointreau
  • ¾ oz. unaged cachaca (sub with light rum if unavailable)
  • ½ oz. grapefruit juice
  • ½ oz. lemon juice
  • 1 dash Angostura bitters
  • Grapefruit twist for garnish

Instructions:

  1. Prepare a cocktail shaker filled with ice.
  2. Add all of the ingredients except the garnish.
  3. Shake well until chilled.
  4. Strain into a chilled glass.
  5. Garnish.

High Tide Cocktail

Ingredients:

  • 1 oz. Cointreau
  • 1 oz. Japanese whisky like Mars Tsunuki
  • ½ oz. lemon juice
  • ½ oz. green tea syrup*
  • Tonic water
  • 2 green apple slices for garnish

Instructions:

  1. Prepare a cocktail shaker with ice.
  2. Add every ingredient other than apple slices.
  3. Shake well until chilled.
  4. Strain into a glass with ice.
  5. Top with tonic water.
  6. Stir gently.
  7. Garnish.

*Green Tea Syrup

Ingredients:

  • ½ cup water
  • 1 green tea bag
  • ½ cup sugar

Instructions:

  1. Bring the water to a boil. 
  2. Remove the water from heat and add the tea bag.
  3. Steep for five minutes.
  4. Remove the tea bag.
  5. Add the sugar and stir until dissolved.
  6. Cool completely before using.
  7. Store in an airtight container in the refrigerator for up to a week.

Black Mole Margarita

Ingredients:

  • 1 ¾ oz. Mezcal
  • 1 oz. Cointreau
  • 1 oz. lime juice
  • ½ oz. black cocoa and orange syrup*
  • 3 dashes of mole bitters (substitute Angostura Cocoa Bitters if unavailable)
  • Soda water
  • Lime wheel to garnish

Ingredients:

  1. Prepare a cocktail shaker with ice.
  2. Add all of the ingredients except the soda water and garnish.
  3. Shake until chilled.
  4. Strain into a glass over ice.
  5. Top with soda water.
  6. Stir gently.
  7. Garnish.

*Black Cocoa and Orange Syrup

Ingredients:

  • 1 cup demerara sugar
  • ½ cup water
  • 2 TBSP of unsweetened cocoa powder
  • 1 large orange peel

Instructions:

  1. Combine the sugar and water in a saucepan.
  2. Boil and simmer until the sugar is dissolved.
  3. Remove from heat and add cocoa powder and orange peel.
  4. Stir until the cocoa powder is dissolved.
  5. Steep while cooling.
  6. Strain.
  7. Keep refrigerated in an airtight container for up to a week.
