What is a “Dry” Wine?

The term “dry” refers to the level of sweetness or residual sugar in a wine. When grape juice is converted to wine, it’s considered to be dry once all the grape sugar has been converted to alcohol during the fermentation process. When a winemaker leaves a little sugar behind, it’s called residual sugar.

Medium-Dry Whites

Pinot Blanc: Known as Pinot Blanco in Italy, this grape has a light, crisp style and is just lightly oaked, if at all.  It pairs well with seafood, light-flavored meats, and mild cheeses. We recommend the Elena Walch Pinot Bianco with its fruity aromas, fresh apple notes and the touch of herbs in the bouquet.

Pinot Grigio/Pinot Gris: This fine white wine has crisp, light, fruit flavors that go well with chicken, shellfish, rich fish and pastas. Try Ruffino Lumina Pinot Grigio, a medium bodied, lively, and elegant white wine; Santa Cristina Pinot Grigio, which is straw yellow in color and has delicate aromas of orange flowers, bananas and tropical fruit; or the Kris Pinot Grigio, which is vibrant and crisp and offers delicate aromas of acacia flower and citrus.

Riesling: Riesling is a highly aromatic and fruity grape variety. It can span a broad range of styles, being produced in both dry to sweet and light to full-bodied variations. It pairs well with fish and seafood, but can also handle the texture and flavors of red meats. Delicious dry Rieslings today come from Washington, Oregon, and California. Try the Thomas Fogarty Skyline White from California’s cool Central Coast.

Very Dry Whites

Sauvignon Blanc: This is one of the driest, crispest wines. It is now successfully grown in wine regions all over the world, including California, Chile, South Africa, northern Italy and Australia, and has become the signature white wine of New Zealand, where it features intense green citrus and berry fruit flavors. Try a bottle of the award-winning Cloudy Bay Sauvignon Blanc from the Marlborough region of New Zealand.

Chardonnay: Chardonnay is the world’s most famous white wine grape. Though it originates in France, it is one of the most widely cultivated grapes, from New Zealand to California, from Argentina to Italy. It pairs well with many different types of foods yet is pleasant enough to drink on its own. Try a bottle of the excellent Duckhorn Napa Valley Chardonnay from California.
