Bourbon: The American Whiskey

Distillers have been making Bourbon since the 18th century. As you probably already know, all Bourbon is whiskey, but all whiskey is not Bourbon.

For a whiskey to be called Bourbon, it must by law be made of a grain mixture that is at least 51% corn; be distilled at no more than 80% alcohol (160 proof); be aged in new, charred oak barrels (a process that gives the Bourbon its reddish color and distinctive taste) at no more than 62.5% (125 proof); and bottled at 80 proof or more. Lastly, it must be made in the United States.

Approximately 95% of all Bourbon is produced in the state of Kentucky. Most Tennessee whiskeys meet the criteria to be called Bourbon, but they are known as Tennessee Whiskey. By law, Tennessee whiskey must be produced within the state, but must also undergo a filtering process with sugar-maple charcoal. Most current producers of Tennessee whiskey do not label or advertise their products as “Bourbon.” Jack Daniels, for example, is Tennessee Whiskey.

Jim Beam is a brand of Bourbon whiskey produced in Clermont, Kentucky, by Beam Suntory. It is one of the best-selling brands of Bourbon in the world. Since 1795 (interrupted by Prohibition), seven generations of the Beam family (originally Böhm from Germany) have been involved in whiskey production for the company. The flagship product is Jim Beam Kentucky Straight Bourbon Whiskey, which is aged 4 years in new charred oak barrels.

Woodford Reserve Distillery, which has been distilling on the same site since 1780, is the oldest Bourbon distillery in Kentucky. Woodford is practically the inventor of the spirit we know and love today. Maker’s Mark is a small-batch bourbon whiskey produced in Loretto, Kentucky. It’s unusual in that no rye is used as part of the mash. Instead of rye, Maker’s Mark uses red winter wheat (16%), corn (70%), and malted barley (14%) in the Mash Bill. It is sold in squarish bottles that are sealed with red wax that give it a distinctive look.
